Food & Wine Magazine recently selected the Top 10 Restaurant Dishes of 2011 and sure enough Mica Restaurant’s Artichoke Agnolotti made the list. This is a huge compliment to head chef Chip Roman who is known for his first restaurant, Blackfish Restaurant, located at 119 Fayette Street in Conshohocken and for Ela which is located at 627 South Third Street in the Queen Village neighborhood of Center City. In 2010 Blackfish was named as one of Philly’s 50 best restaurants by Philadelphia Magazine.
“Charles “Chip” Roman has been cooking since he was three years old. His love of culinary arts grew with age, and he attended Drexel University’s Culinary Arts program while also earning a business degree. While in school, Chef Roman studied with some of Philadelphia’s most respected and best-known chefs, including Marc Vetri, Georges Perrier and Daniel Stern. Le Bec Fin, where Chip worked for a total of five years, offered him a scholarship to study at Drexel University. Upon graduation, Chip continued to work as a chef at Le Bec Fin, working his way up to sous chef and saucier.”
